i had a similar pig experience! except all i read was the title and that did it for me!
i'm more of a flexitarian as i'll occasionally eat chicken

there's really tons of snacks out there that don't have animal products in them.. i like snack bars..

as for vegetables, how about making wok/stirfry? very easy and healthy and yummy! also you can make the asian noodles with vegetables..
indian and turkish food also use tons of veggies!
what kind of veggies and grains do you like best? i may be able to give some more detailed pointers
