I am in need of a GREAT mac n' cheese recipe.... a recipe that has been tried and tested by YOU, not one just grabbed off the 'Net.... baked in casserole pan is the preferred kind.....

I have been looking for one too for over a year. The ones I find don't take good. It shouldn't be this hard to find a simple mac-n-cheese, but I haven't had much luck.

if I can't find a good one ... perfected by others... Paula Deen has on on her website I might give a try... I would prefer one that is 'tried n true' than one from a website though...

I don't blame you!! I have tried several from the internet and they always come out dry and taste aweful. There are several that look and sound good but I hate wasting food when they don't turn out right.

ummmm that would be me...and my relatives have been trying to get it for years...sadly I don't measure anything, I can tell you what I put in...LOL been telling hubby to tape me making it as a living recipe...one pound of elbow mac...butter...flour...american cheese slices(24 slices)(I use Kraft--sometimes deluxe)...milk...canned milk...white wine...onions finely chopped...onion powder...garlic powder...curry(secret ingredient)....4-8cups of shredded mild cheese...breadcrumbs(I use progresso plain)..sour cream...salt...pepper...sugar...that's the ingredients

saute onions in butter..add flour to make a roux...then some white wine to lossen up...milk..and canned milk until it's saucy..you want it semi loose for the cooked mac to soak up...adding american cheese...and spices to taste..go very easy on curry it should enhance and not be noticed...add sour cream and if mixture gets too thick add either milk or water...get a big giant casserole bowl this makes alot...spray with pam..layer cooked mac and shredded cheese save cheese for top....pour sauce on mac...you can stir to evenly distribute the sauce...it should be semi soupy looking...sprinkle bread crumbs around perimeter cook 45-60 or until totally bubbly and cheese on top is crusty brown...serve within a half hour... I think that's everything...LOL

I wish I could help but I am not allowed to veer away from the standard melted Velveeta over elbow mac. Its considered getting above my raising if I try...lol "don't go messing with whats already good." I put crumbled bacon in it once and the look I got lol...ugh men!

Jan that recipe sounds exactly like my moms except she uses more cheese, like 3 cups! Always sharp cheddar. So gooey and yummy!
