Default Random Question - cooking beef advice?

I'm making a stir fry tonight with beef and want to make sure it's tender!! Can't find any info on it - and I know last time I did it, it was TOUGH!!

Can anyone offer any advice?!!

What kind of beef so you use? I just made some the other night with sirloin steak strips. That was very tender. Just pound it out then cut into the strips.

it's just beef stir fry it says - already cut. should I bash it? Do I cook it for ages or a flash in the pan?

Try tenderizing it a little, I cooked ,mine on med heat, then put everything on high once I added the veggies and sauce.

Cut it cross-grain, if you get the noncut stuff. Use a heavy pan, sear it with high heat (to keep the juice in) then turn heat down a smidge and add veggies and sauce. Let it finish like that. Adding a tiny bit of a light oil like olive will keep it from burning/sticking.

Mmmmm I love a good stir-fry.

I always pound mine out a bit and marinate. Sometimes the beef they sell already cut up is tough so I'll usually get it myself and cut it. Good Luck. Sounds great.
